About once a month, we’re bringing you a scrumptious and doable recipe with a southwestern flare. This recipe was originally published in Clay Thompson’s Enormously Big Official Valley 101 Cookbook. Do you have a recipe you’d like to share? Whether you’re a professional chef or home cook, we want to hear from you. Submit to info@arizonaoddities.com.

Hamburger Calico Beans Recipe

This is an old recipe that’s been passed around between friends for a long time. Each time I fix it I get raves with requests for the recipe. Even people who don’t like lima beans like them in this.
Submitted by Kristy Marston

Lima Beans1 lb. Ground Beef 2 teaspoons White Vinegar
1/4 to 1/2 lb. Bacon 1 2-lb. can Pork and Beans
3/4 cup Ketchup 1 (1 lb.) can Kidney Beans,
3 tablespoons Brown Sugar drained
1 teaspoon Salt 1 8-oz. can Lima Beans,
1 teaspoon Prepared Mustard drained

Brown ground beef; drain. Brown bacon; drain. Combine both in slow cooker. Add ketchup, brown sugar, salt, mustard and vinegar. Add pork and beans, kidney beans, and lima beans. Cover and cook 6 to 8 hours on High. Serves 6 to 8.
